According to GalaxyClub, the Galaxy S21 Ultra (SM-G998) will use a battery with model number EB-BG998ABY. The battery has a rated capacity of 4,885mAh, and Samsung could market its typical battery capacity as 5,000mAh. While the Galaxy S21+ appears to feature a slightly higher battery capacity than the Galaxy S20+, the Galaxy S21 Ultra will continue using the same battery capacity as that of the Galaxy S20 Ultra.
